Convotherm Appliance Repair in Groveland, FL

A combi oven often handles roasting, steaming and holding in the same shift. When your Convotherm starts missing temperatures, losing steam or stopping mid-program, we track the fault through the oven’s heat, steam, water and control systems and give you a written price before any work begins.

What We Cover

When Your Convotherm Oven Falls Behind, the Whole Kitchen Notices

Convotherm combi ovens combine convection heat, steam and moisture control in one cooking chamber. That makes them versatile, but it also means one failing sensor or water issue can affect several cooking modes at once.

We work on Convotherm maxx pro, maxx, maxx pro floorstanding, mini pro and mini units. Controls, steam generation, cleaning systems and door designs vary by product family and model, so we identify your exact unit before we start testing.

These are the symptoms chefs and kitchen managers usually notice first.

  • Cooking Temperatures Won't Stay Consistent

Proteins finish unevenly across the racks, or the chamber drifts from the set point halfway through a batch.

  • Steam Performance Has Changed

Vegetables come out drier than usual, bread doesn’t get the crust it used to, or you don’t see as much vapor when the door opens.

  • Cooking Programs Stop Before Completion

A saved program stops partway through, shows a message or skips a step your team relies on.

  • Controls or Display Stop Responding

The screen freezes, touches don’t register, or the controls reset to default settings.

  • Cleaning Cycles Aren't Working as Expected

The automatic cleaning cycle stops, leaves residue or reports a problem before it’s finished.

Know What a Convotherm Repair Costs Before We Start

Commercial repair costs depend on the equipment and what failed. We diagnose the unit first and give you the price in writing before any work begins, so you can plan around it.

Early Warnings

Your Convotherm Doesn't Need to Stop Completely to Need Attention

Combi ovens often keep running while performance slowly declines. Your team may notice longer cook times or less consistent results before anyone reports a problem.

Call (352) 562-0907
  • Preheating takes longer

If the oven takes noticeably longer to reach temperature at the start of the day, a heating part or sensor may be starting to struggle.

  • Batches aren’t as consistent

If one side, shelf or corner is cooking differently than before, the oven may have an airflow or temperature problem.

  • Water shows up where it shouldn’t

Water around the door, under the unit or near the drain connection should be checked.

  • The same message keeps returning

If a warning clears and comes back later, the fault behind it hasn’t been fixed.

  • The fan sounds different

A new rumble, squeal or uneven fan sound can mean the fan motor or its mounting needs attention.

  • Cleaning doesn’t finish or leaves residue

This often points to a water supply, cleaning agent, pump or drainage issue.

Symptoms We See

Convotherm Heating Problems That Can Slow Down Service

Heating problems usually show up as longer preheat times, slow recovery after loading or uneven results. Because these ovens use temperature sensors and electronic controls, we check both the heating components and the signals that control them.

  • Oven won’t reach temperature

We check the heating components, related safety devices and the controls that tell them when to turn on.

  • Slow recovery after loading

A heating component that’s losing output, a door that isn’t sealing or poor air circulation can slow recovery.

  • Uneven cooking across racks

Fan speed, fan direction and airflow through the chamber all affect cooking consistency.

  • Temperature drifting from the set point

A chamber or core temperature sensor giving inaccurate readings can make the controller heat too much or too little.

  • Oven shuts off during a cycle

A safety device may be tripping. We look for the cause instead of just resetting it.

If the oven overheats, smells like it’s burning or trips a breaker, turn it off and call for service. Don’t keep using it.

Symptoms We See

When Steam Performance Isn't What Your Kitchen Needs

Steam is what separates a combi oven from a convection oven. Depending on the model, steam may be made in a steam generator or by spraying water into the cooking chamber. Either way, it depends on water supply, heat and accurate sensor readings.

Steam problems are often tied to water quality. Our commercial kitchen equipment repair page explains how we handle scale-related damage and prevention.

  • Less steam than usual

Low water pressure, a restricted inlet, scale buildup or a heating problem in the steam system can all reduce steam output.

  • Humidity doesn’t match the program

Moisture control depends on sensors and venting. We check whether the oven is reading and controlling humidity correctly.

  • Scale buildup

Central Florida’s hard water leaves mineral deposits that can affect steam parts over time. Water treatment and descaling help reduce the problem.

  • Steam or water messages

The oven is reporting a steam or water issue. We test the full water and steam path to find the cause.

Symptoms We See

Convotherm Control Panel & Interface Problems

Depending on the model, Convotherm ovens may have touch screens or dial controls. These interfaces manage programs, cooking modes and cleaning, so a control problem can affect everything.

  • Screen not responding to touch

Heat, moisture, a worn touch panel, a loose connection or a control fault can cause it. We test to find which one.

  • Display blank or flickering

We check the power supply to the display before assuming the display or control board has failed.

  • Programs missing or not saving

Programs are stored differently depending on the model. We check the controls before recommending a repair.

  • Controls restart during use

Power problems, overheating in the control area or a control fault can cause random restarts.

Symptoms We See

Convotherm Cleaning System Problems Need Proper Diagnosis

Many Convotherm ovens have automatic cleaning, but cleaning systems vary by product family and model. When a cleaning cycle fails, the cause may be water supply, cleaning agent, a pump, a sensor or drainage.

Use only the cleaning products recommended for your model, and follow the manual when refilling or replacing them.

  • Cleaning cycle stops early

We look at the step where it stops and check the parts involved in that part of the cycle.

  • Residue left in the chamber

Low water pressure, the wrong cleaning agent, an empty container or a pump issue can leave residue behind.

  • Water not draining during cleaning

A blocked drain, debris in the chamber or a drainage problem can stop the cycle.

  • Cleaning message won’t clear

We check the cleaning system against the model’s service information.

Symptoms We See

Door, Seal & Chamber Problems Can Affect Cooking Performance

The door seal holds in heat and moisture. A leaking door can affect temperature, steam and cooking time. Door designs vary by model, and some include switches that tell the oven the door is closed.

  • Steam escaping around the door

A worn gasket, a misaligned door or damaged hinge parts can let steam escape.

  • Oven won’t start with the door closed

The door switch or its signal may not be confirming that the door is closed.

  • Water dripping from the door

Some condensation is normal, but a steady drip may point to a door drip tray, seal or drainage problem.

  • Loose fan guard or damaged racks

Loose fan guards, damaged racks or a missing chamber part can affect cooking and safety.

Symptoms We See

Water Supply Problems Can Affect More Than Steam

Water is used for steam, humidity control and cleaning. A supply problem can cause issues that look like heating or control faults.

Please don’t change water or drain connections yourself. Tell us about any recent plumbing work when you call.

  • Low water pressure

A partly closed shutoff, clogged filter or restricted line can reduce the water the oven receives.

  • Water treatment issues

An old filter or water treatment system that isn’t working properly can speed up scale buildup.

  • Water valve problems

Inlet valves control when water enters the oven. A sticky or scaled valve can cause low water or overfilling.

  • Drain problems

A blocked or poorly vented drain can cause water to back up, stop cleaning cycles or leak.

What Usually Fails

What Could Be Behind a Convotherm Oven Problem?

A single symptom can come from several systems. These are the components we may check, depending on your Convotherm model and the problem.

  • Heating components

Chamber heating parts and steam system heaters, depending on the model.

  • Fans and fan motors

They circulate heat and moisture through the chamber. Fan problems affect how evenly food cooks.

  • Temperature and core probes

Chamber sensors and core probes tell the controls when to heat or when food is done.

  • Water inlet valves

They control water for steam, humidity and cleaning. Scale can affect how they work.

  • Drain and cleaning pumps

They move water and cleaning agent during cleaning cycles on compatible models.

  • Door gaskets and switches

Gaskets hold in heat and steam. Switches confirm the door is closed.

  • Electronic controls and interfaces

We test them after confirming the parts they operate and the signals they receive.

  • Safety devices

Thermal limits and other safety devices shut the oven down when something is wrong. We find the cause and never bypass them.

Reading The Display

Error Messages Are Helpful, But the Model Still Matters

Convotherm ovens can show messages when they detect a problem. The meaning can depend on the product family, model and software, so the model matters as much as the message.

Service information is model-specific

We compare the message to your model and serial number instead of relying on a generic list.

A message points to a system

It may point to heating, steam, water or cleaning. We still test the parts to find the cause.

Note when it appears

Let us know if it appears during preheating, a specific program or a cleaning cycle.

Take a photo of the screen

Take a photo before clearing the message. It gives us useful information before the visit.

A Few Minutes Now

Know Your Convotherm Model Before Scheduling Service

Convotherm service information can be model-specific. Having these details ready when you call helps us prepare for the visit.

  • Product family

Let us know if it’s a maxx pro, maxx, maxx pro floorstanding, mini pro or mini.

  • Model and serial number

Check the data plate on the unit. A photo of the full label works best.

  • The error message

Take a photo of the screen or write down the message exactly as it appears.

  • The cooking program

Tell us which program, mode or cleaning cycle was running.

  • Temperature behavior

Let us know if it runs hot, runs cold, heats slowly or drifts during cooking.

  • Steam behavior

Tell us if there’s too little steam, too much steam or water where it shouldn’t be.

Honest Advice

Repair the Convotherm Oven or Consider Replacement?

For a combi oven, repairing is often worth considering, but it depends on the unit and the repair. Here’s what we review with you.

  1. 01

    Compare the cost

A combi oven is a major investment, so many repairs are worth considering. Compare the repair cost with the cost of a comparable new unit.

  2. 02

    Check parts availability

We check whether the parts are available for your model before recommending a repair.

  3. 03

    Look at the unit’s condition

Scale damage, chamber wear or repeated failures can change our recommendation.

  4. 04

    Consider downtime

A repair with available parts may get the oven back in service sooner than ordering and installing new equipment.

  5. 05

    Consider your kitchen’s needs

If your menu or volume has outgrown the unit, replacement may make more sense.

Help Your Convotherm Handle Daily Commercial Use

These routines are safe for kitchen staff. Anything involving panels, water lines or electrical parts should be handled by a technician.

  • Run cleaning cycles as recommended

Follow the cleaning schedule in the manual for your model.

  • Handle probes carefully

Don’t pull the core probe by its cable or leave it hanging where it can be damaged.

  • Keep vents clear

Don’t block the vents or store items on top of or next to the oven.

  • Report changes early

Ask staff to report new messages, leaks or longer cook times right away.

Which Convotherm models do you service?

We service Convotherm maxx pro, maxx, maxx pro floorstanding, mini pro and mini combi ovens. For other Convotherm units, call with the model number and we’ll confirm.

My Convotherm oven isn’t heating. What should I do?

Note any message on the screen, turn the oven off if it’s acting unusually, and call us with the model number. Don’t try to reset safety devices or open panels.

Why does my Convotherm temperature fluctuate?

A sensor reading, fan problem, door seal leak or heating issue can all cause temperature swings. We test the full temperature control system.

Why is my Convotherm producing less steam?

Low water pressure, scale buildup, a water valve problem or a steam system fault can reduce steam output. Hard water in the area can make scale buildup worse.

The control panel on my Convotherm stopped responding. Can you fix it?

Yes. We check the power supply, connections and controls to determine whether the problem is the interface, the control system or something else.

Why won’t the cleaning cycle finish on my Convotherm?

On models with automatic cleaning, water supply, cleaning agent, pumps, sensors or drainage can stop the cycle. We check the step where the cycle stops.

Can you replace a Convotherm door gasket?

Yes. Gaskets are made for specific models, so please have the model number ready. We also check the hinges and latch while we’re there.

What does my Convotherm error message mean?

It depends on the product family, model and software. Send us a photo of the screen and the model number, and we’ll tell you which system it relates to.

Where do I find the model and serial number?

Look for the data plate on the unit. The location varies by model. A photo of the full label is the easiest way to share it.

Should I repair or replace my Convotherm oven?

It depends on the repair cost, parts availability, the oven’s condition and your kitchen’s needs. We’ll give you a written quote and an honest recommendation.

I used Ramsom Appliances to install a dishwasher that I was gifted. My installer, Rafael, was knowledgeable, professional, and overall a pleasure to have for this job. The dishwasher is level, he made sure the water line was installed at the right angle to prevent a backup in the flow of things. The attachment to the garbage disposal was perfect with no leaks afterwards. The front office staff, Ms. Vanessa was also very nice and professional and was able to schedule my service appointment for the next day, which I was very happy about that. I highly recommend RAMSON Appliances. I will use them in the future.

  • Great experience. Scheduling appointment was easy. They gave a heads up via text when they were on the way and they were on time...answered all my questions and gave me a whole education about what was wrong with my refrigerator and how much parts and labor would cost to get to the bottom of it. There were no sleazy tactics to just get my money. Straight up, honest service. I will call again when needed and refer to anyone who needs appliance service.

  • Steve Tollerton

Easy to contact, quick appointments. The refrigerator lights fix was more difficult than anticipated and took 2 service calls but the tech followed up quickly and i was only billed for the additional parts, not 2 calls. This is the 3rd time we’ve used Ramson and still very satisfied.
